Opened within the autumn within the 1st arrondissement of Paris and freshly awarded a Michelin star, Granite is shaking up the culinary world. At its head, the younger chef Tom Meyer (who labored for Anne-Sophie Pic) unveils a putting cuisine that places the spotlight on merchandise from the Ile-de-France, fish and meat from accountable farming, whereas giving its letters of the Aristocracy to the plant kingdom. Daring and balanced, the dishes awaken our taste buds and, like the environment of the place, are an ode to naturalness.
